It was back in mid-July that I thought it would be nice to make this cake to share as a good friend was coming over for dinner. It was such a hit she asked me for the recipe and gave it to her mom to make for an upcoming birthday!
I guess that’s what cake should be all about: Celebrations, and this one doesn’t disappoint. The nice thing about cheese cake is that you can dress it up or down by topping it with decadent treats or eating it just as it is.
Given it was mid-July and a dull and chilly winters evening, I decided to serve this round of cheese cake topped with whipped cream, bright summer raspberries and a sprinkling of pomegranate arils. The contrast between the stark white cheese cake, cream and the bright red of the berries was very striking and definitely went down a treat. You could just as easily top with any other kind of fruit…. Say sliced kiwi or perhaps fresh strawberries, really the sky is the limit here, but I would stick to sweet given that this particular cheesecake is sweet.
- 1 cup Almond flour
- ¼ cup xylitol
- ¼ cup desiccated coconut
- 1 tsp baking powder
- 60g butter melted
- ¼ tsb cinnamon
- 500g full fat cream cheese, softened
- 3 large eggs
- 1 Tbs Organic Vanilla Extract
- 1/2 cup xylitol
- Preheat the oven to 180 degrees. Line the bottom of a 7” spring form pan with parchment paper and grease.
- To make crust combine all of the crust ingredients in a large bowl and mix well. Pour into greased spring form pan and spread evenly over the bottom of the pan. Press down to form a type of "crust" with the back of a spoon. Bake in the oven for 15 minutes or until starting to brown slightly. Allow to cool for 5 minutes.
- To make the filling by beating the cream cheese (a food processor helps here), xylitol and vanilla extract until combined. Add the eggs to the mixture and continue mixing until the mixture is smooth.
- Carefully pour the filling over the crust and spread out evenly. Bake in the centre of the oven for 30 minutes or until the centre has start to set.
- Cool on a wire rack and then run a knife around the collar to loosen from the pan.
- Serve with additional whipped cream and if your carbohydrate intake allows a few fresh berries.
